Tandoori Chicken Wraps

RECIPE

I remember going to the same cafe everyday and ordering a tandoori wrap in India. This is my interpretation and always a total crowd-pleaser.

 

INGREDIENTS

  • Chicken thighs

  • Tandoori paste

  • Greek yogurt

  • Lemon - juiced

  • Gem lettuce

  • Cucumber

  • Red onion

  • Mango chutney

FLAT BREAD (makes 2 large)

  • ½ cup Greek yoghurt

  • ⅓ cup self raising flour

  • Pinch of salt

METHOD

  1. Mix tandoori paste with yoghurt and lemon juice, mix with chicken in a bowl, cover and leave to marinate (the longer the better)

  2. We like to cook ours on the BBQ grill, turning and basting the chicken with excess sauce until charred, then closing the lid and cooking through (you can also do this with a griddle pan + oven)

FLAT BREAD

    1. Mix together, then knead till doughy - roll into thin flat breads

    2. Fry up DRY in a non-stick pan

    3. Chop up cooked chicken

    4. Fill your breads with yoghurt, mango chutney, lettuce, cucumber and red onion
