RECIPE

This recipe came from a friend’s dad, we’ve been cooking it for years and it’s a staple in our kitchen throughout winter. I love cooking this whenever we’re sick or on a cold, rainy day. This was also a meal I prepped before Goldie’s birth and enjoyed postpartum.

This is a great meal to freeze into portions, if you find that you need more liquid - just add extra water and season if needed.

 

INGREDIENTS

  • 1 tbsp Coconut Oil

  • Small leek chopped

  • 2 cloves of garlic minced

  • 1 cup buckwheat

  • 500g Chicken thigh fillets - chopped into 5cm pieces

  • 1 large sweet potato cut into cubes

  • Large handful of cup mushrooms cut into quarters

  • 2L of chicken stock

  • salt & pepper

  • Large handful of Kale, stems removed

TO SERVE

Fresh, buttered bread

METHOD

  1. Heat olive oil in a large pot and add leek & garlic and sauté until soft over medium heat

  2. Add buckwheat, sweet potato, chicken, mushrooms and stock, bring to a boil and let simmer until sweet potato has softened

  3. Add Kale and season with salt & pepper
