Chickpea Dhal & Flat Bread

Al and Imo - Mediterranean Chicken Recipe
 
 

RECIPE

We received this recipe a couple of years ago from our friend Jess, it's a meal that we love and have on heavy rotation. You can pack it out with seasonal vegetables and the leftovers can be eaten with eggs for breakfast!

 

INGREDIENTS

  • 1 bunch of coriander

  • 1 brown onion - diced

  • 3 garlic cloves- minced

  • 1 tbs grated ginger

  • ⅓ cup korma paste

  • 250g red lentils, rinsed

  • 400g chickpeas

  • 400g coconut milk

  • 1 ½ cups of water

  • 120g spinach

  • 1 lemon

  • 1 fresh chilli

FLAT BREAD (makes 4 small)

    • ½ cup Greek yoghurt

    • ⅓ cup self raising flour

    • Pinch of salt

METHOD

  1. Chop roots and stems of coriander.

  2. Add garlic, onion, ginger, coriander root + stems to a pot

  3. Stir in korma paste, simmer

  4. Add lentils, chickpeas, coconut milk and 1 ½ cups of water

  5. Bring to boil and simmer 20 mins

  6. Stir in spinach and lemon juice

  7. Top with fresh coriander & chilli

FLAT BREAD

  1. Mix together, then knead till doughy.

  2. Fry up DRY in a non-stick pan.
