Al and Imo - Mediterranean Chicken Recipe
 
 

RECIPE

This recipe has been passed onto us by our neighbour Di and I believe it was passed onto her by another one of our neighbours… may as well be called Freshwater Creek Chicken.

 

INGREDIENTS

  • 8 Chicken fillets - skin removed

  • 4 cloves of garlic

  • 3tsp oregano

  • salt & pepper

  • ¾ cup olive oil

  • 1 + ½ cups pitted prunes quartered

  • ¾ cup dried apricots

  • ¾ cup green olives

  • ½ cup capers

  • 4 bay leaves

On top of chicken

  • ¾ cup brown sugar

  • 1 + ½ cups white wine

TO SERVE

Buttered couscous & green salad

METHOD

  1. Prepare 24 hours in advance

  2. Spread chicken fillets out in baking dish

  3. Combine other ingredients (except brown sugar & wine) and spread over chicken.

  4. Cover and refrigerate overnight

  5. Preheat oven to 180 C

  6. Sprinkle chicken with brown sugar and wine

  7. Bake 30-40 mins or until cooked

  8. Serve on a bed of couscous with a fresh green salad
